1 Point Chocolate Chip Muffins

My fourth batch of muffins, figuring it out as I go!

1 point each, makes 12 muffins

Recipe:
1 cup Kodiak pancake mix
3 eggs
3 bananas
Lily’s milk chocolate chips (30g for 2 points, which worked out to 6-7 per muffin)

This time, I blended everything in a blender, and it came out nice as smooth (batch three was chunky with banana). I’m excited to try this method with the Kodiak chocolate pancake mix too.

Bake at 350 for 20 minutes

Next time I’ll add blueberries or raspberries. Lots of possibilities! My kids LOVE them!
