WW Irish Soda Bread

Even if you’re not Irish, this is an easy and delicious Irish Soda Bread recipe you will enjoy. Recipe makes 16 slices – 2 points per slice. To get somewhat even slices, I cut these in wedges, like you would a pizza pie. I cut the loaf in half, then half again. For each quarter, I sliced those in half, and then half again too. So you end up with 16 bread wedges. You can slice it any way you want, I just did it that way so I knew the slices were even and I could more easily determine the points value that way.Yield/Servings: 16 slicesServing Size: 1 sliceTotal Cook/Prep time: 40 minutes

Ingredients

  • 2 cups Bisquick (Heart Healthy version in the white box)
  • 1 cup non-fat greek yogurt
  • 1 egg
  • 1 tsp baking SODA
  • 1 tbsp sugar

Directions

Preheat oven to 375

Line a baking sheet with parchment paper and set aside

Mix the Bisquick, baking SODA and sugar in a bowl

Add egg and yogurt, mix with a spoon or spatula to combine

Fold the dough a few times and form into a round loaf shape (see video)

Score the dough in a cross shape

Place it on the baking sheet and bake for 25 minutes

Wait 30 minutes before slicing
