WW Chicken Salad – Low Point

This is for an easy to make lunch for grab and go. I call it chicken salad but it’s only chicken and mayonnaise. I use 2 large cans of Kirkland canned chicken (Costco) and 1/2 cup Hellmann’s Salad Dressing with Canola Oil.

I mash the chicken up with my fingers

Add 7 Tablespoons dressing (easier

To say 1/2 cup less 1 Tablespoon)

Mix it up

I divide into 6 individual servings

Each is 3.2 ounces

Each serving is 1 point

I eat it on Firehook Sea Salt Crackers (1 oz is 2 points) or a 1 point flour tortilla. Sometimes I just eat it without anything. You could bulk this up further with hard boiled eggs, pickles, grapes or onion but I like it plain. You could add lettuce or other veggies to a wrap. Easy peasy. If I’m going to be out for the day I’ll throw the chicken, a wrap and a piece of fruit in a small lunch bag/ cooler. 2 point lunch on the go which saves me from a McDonalds visit.
