Weight Watchers Lemon Cream Frozen S’mores

In today’s post: Frozen s’mores are the perfect way to enjoy the flavor of s’mores while cooling off on a hot summer day – no campfire necessary! They’re easy to make and keep in the freezer to enjoy anytime. These frozen lemon s’mores are a cross between an ice cream sandwich, a s’more and a lemon icebox pie! Quick to make, these make a great treat, especially to cool you down when it’s hot outside. Plus, the individual portions makes this dessert easy to share. Low-Point Version (Approx. 2 Points Each)

Ingredients (Makes 8 Frozen S’mores)

  • 8 full graham cracker sheets (break into 16 squares)
  • 1 cup fat-free Greek yogurt, vanilla or plain
  • 1 packet sugar-free lemon pudding mix (about 1 oz from a 1.4 oz box)
  • 1 tsp lemon zest (optional)
  • 1 tbsp fresh lemon juice
  • 1 cup Lite Cool Whip, thawed

Instructions

  1. In a bowl, mix Greek yogurt, lemon pudding mix, lemon juice, and lemon zest.
  2. Fold in the Lite Cool Whip until smooth and fluffy.
  3. Spread the mixture evenly onto 8 graham cracker squares.
  4. Top with the remaining 8 graham cracker squares to make sandwiches.
  5. Place on a parchment-lined tray.
  6. Freeze for at least 4 hours or overnight.
  7. Enjoy straight from the freezer.

WW Points (Estimated)

  • 2 Points each if cut into 8 sandwiches.
  • If you make 12 smaller sandwiches, they may be 1 Point each depending on your WW plan.

🍋 Extra-Low Point Hack

For an even lighter version:

  • Skip the pudding mix.
  • Use:
    • 1 cup nonfat Greek yogurt
    • 2 tbsp sugar-free lemonade drink mix powder
    • 1 cup Lite Cool Whip

This keeps the lemon flavor strong while reducing calories and ingredients.
