Weight Watchers Kodiak Protein Muffins


I finally tried the 1p Kodiak Protein Muffins. Why did I wait this long to try them? So good! I found variations of the recipe but this is what worked for me.


– 1 cup Kodiak Protein Pancake Mix (buttermilk & honey)

– 1/2 cup water

– 1 egg

– 1/4 cup unsweetened applesauce

– 1 mashed banana

– 1 cup blueberries

Bake 20-25 min at 375

Makes 10 regular sized muffins

1 point per muffin
