Weight Watcher Cloud Pancakes
Low Point Version – soft, fluffy & jiggly like the photo!
Ingredients (Makes 2 large cloud pancakes)
- 2 eggs
- 2 tbsp nonfat Greek yogurt
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1–2 tbsp zero-calorie sweetener
- 1/4 tsp baking powder
- Optional: powdered sugar substitute for topping
Instructions
- Separate the eggs.
- In one bowl, whisk the yolks with Greek yogurt, vanilla, cornstarch, sweetener, and baking powder until smooth.
- In another bowl, beat egg whites until stiff peaks form.
- Gently fold the egg whites into the yolk mixture without deflating.
- Heat a nonstick pan on very low heat and lightly spray with cooking spray.
- Spoon tall rounds of batter into the pan. Cover with a lid and cook 4–5 minutes per side until golden and fluffy.
- Dust with powdered sweetener if desired.

Tips
- Cook LOW and slow so they stay thick and airy.
- A lid helps create that soufflé-style rise like in the photo.
