Weight Watcher Cloud Pancakes

Low Point Version – soft, fluffy & jiggly like the photo!

Ingredients (Makes 2 large cloud pancakes)

  • 2 eggs
  • 2 tbsp nonfat Greek yogurt
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1–2 tbsp zero-calorie sweetener
  • 1/4 tsp baking powder
  • Optional: powdered sugar substitute for topping

Instructions

  1. Separate the eggs.
  2. In one bowl, whisk the yolks with Greek yogurt, vanilla, cornstarch, sweetener, and baking powder until smooth.
  3. In another bowl, beat egg whites until stiff peaks form.
  4. Gently fold the egg whites into the yolk mixture without deflating.
  5. Heat a nonstick pan on very low heat and lightly spray with cooking spray.
  6. Spoon tall rounds of batter into the pan. Cover with a lid and cook 4–5 minutes per side until golden and fluffy.
  7. Dust with powdered sweetener if desired.

  • 0–1 Points each depending on your WW plan and sweetener used.

Tips

  • Cook LOW and slow so they stay thick and airy.
  • A lid helps create that soufflé-style rise like in the photo.
