Tofu Scramble The Quintessential EGGLESS recipe


Whether you are looking for the perfect Meatless Monday recipe or you are on Weight Watchers and SICK of eggs this recipe will fit the bill!

It basically tastes like scrambled eggs minus the eggs and the entire pot is ZERO points on weight watchers blue (though I’d suggest at least splitting it into two servings!)

● 7 oz of extra firm tofu (½ a block).
● ½ teaspoon of minced garlic.
● ¼ of chopped onion.
● 3-4 cherry tomatoes chopped.
● 1 teaspoon of turmeric.
● 2 teaspoons of garlic powder.
● 1 ½ tablespoons of nutritional yeast.
● 5 sprays non fat cooking spray- 0 points
● Salt and pepper to taste.
● Wash and chop your tomato and onions.
● Use your hands to break apart the tofu. Break apart to resemble scrambled eggs.
● Use a skillet to heat up your oil. The stove should be set to medium high heat.
● When oil is hot add the onion and saute until aromatic.
● Turn down the heat a little bit and add the garlic so it doesn’t burn. Saute.
● When aromatic add the tofu, turmeric, nutritional yeast, garlic powder, salt, and pepper. All of
these can be adjusted to your liking.
● Scramble until well combined.
● Garnish with tomato, serve and enjoy.
