  • 3 Bananas
  • 1 cup Kodiak pancake mix
  • 3 eggs
  • 1 cup blueberries


  1. 1 Preheat oven to 375°
  2. 2 Combine all ingredients but do not use mixer, blend by hand
  3. 3 Divide into 12 cupcake/ muffin pan. Either use cupcake liners or spray pan before adding batter.
  4. 6 Bake 16-18 minutes
  5. 7 Store in refrigerator for up to 7 days. I like to microwave them for 30 seconds to eat. You can also store these muffins in your freezer for up to 3 months. Just place into individual bags so you can easily remove 1 at a time. Allow to thaw or defrost in microwave.
