Stuffed Acorn Squash

I made this for supper tonight. Mine were 9 points because I added extra rice to my recipe to make it go a little further. I also used sausage links. I cut the casing and just used it like ground sausage. I used 4 whole acorn squashes giving me 8 servings. So dang scrumptious.

Stuffed Acorn Squash

4-5 acorn squash

1/2 lb sweet ground sausage

1/2 lb hot ground sausage

4 ears of corn (or a can)

1 pablano chili pepper diced

1 onion diced

1 bell pepper diced

2 cups cooked rice

Pepperjack or Monterey jack cheese

Cook ground sausage till browned put in large bowl, cut corn off the cobs and combine with pablano and fry in cast iron pan with some butter till almost cooked. Remove and mix with sausage. Add onion and pepper to the pan cook till softened. Mix in with other ingredients. Add rice and mix all ingredients together. Add salt, garlic powder and pepper to taste. Cut acorn squash in half and remove guts. Cook squash on a plate in microwave for 6 minutes, removed and fill middle with stuffing. Top with cheese and microwave again for 3-5 minutes till soft and cheese melted. Put halfs into bowl to eat easier ­čśŐ bon apetite
