Slimming World Bakewell Cake


 Bakewell Cake Slices 1.5 syns each piece
37g coconut flour (5 syns), 5 eggs separated, 2 tsp almond extract , 1 tsp baking powder (0.5 syn), 3 tbsp sweetener (1.5 syns), 3 tbsp cold water. Whisk egg whites till stiff, in a separate bowl mix the yolks, essence, water, and sweetener together then working quickly mix in the flour then fold in the egg whites (you need to work quickly as the flour is very absorbent ). Spoon half into a silicone baking mould sprayed with frylight . warm 3 tablespoon of reduced sugar jam (4.5 syns )and gently put on top & cover with remaining mixture and sprinkle with 12.5g of flaked almonds (4 syns) and bake for approximately 30 mins on 180 degrees. Once cold sprinkle with 1/2 a teaspoon of icing sugar (0.5 syn). Total syns for whole cake = 16 cut into 12 slices = 1.5 syns a slice
