Low-Point Weight Watchers Zucchini Lasagna

Ingredients
- 4 medium zucchini, sliced lengthwise into ⅛-inch strips
- 1 lb (96–99% lean) ground turkey or extra lean ground chicken
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 cups no-sugar-added marinara sauce
- 1 tsp Italian seasoning
- ½ tsp oregano
- Salt and black pepper, to taste
- 1 cup fat-free cottage cheese (blended until smooth)
- 1 cup fat-free ricotta cheese
- 1 large egg
- 1 cup reduced-fat mozzarella cheese, shredded
- ¼ cup grated Parmesan cheese (optional for a golden top)
- Fresh parsley or basil (optional)
Instructions
- Prep the zucchini
- Slice zucchini lengthwise.
- Sprinkle lightly with salt and let sit for 20–30 minutes.
- Pat dry with paper towels to remove excess moisture.
- Cook the meat sauce
- Spray a skillet with cooking spray.
- Cook onion until softened.
- Add garlic and lean turkey.
- Stir in marinara, Italian seasoning, oregano, salt, and pepper.
- Simmer for 10 minutes.
- Make the cheese mixture
- Blend cottage cheese until smooth.
- Mix with ricotta and egg.
- Assemble
- Spread a little meat sauce in a 9×9-inch baking dish.
- Layer zucchini.
- Spread cheese mixture.
- Add meat sauce.
- Repeat layers until ingredients are used.
- Finish with mozzarella and Parmesan.
- Bake
- Cover with foil and bake at 375°F (190°C) for 35 minutes.
- Remove foil and bake another 15–20 minutes, until bubbly and lightly browned.
- Let rest 15–20 minutes before slicing.

- Use 99% lean ground turkey or chicken breast.
- Choose fat-free cottage cheese and fat-free ricotta.
- Use reduced-fat mozzarella instead of full-fat.
- Skip Parmesan if you want to save another point.
