Weight Watchers Blueberry Frozen S’mores

Ingredients
- 12 full graham cracker sheets (24 squares)
- 2 cups plain nonfat Greek yogurt
- 1 (1 oz) box sugar-free instant cheesecake pudding mix
- 1 cup light whipped topping (such as Lite Cool Whip)
- 1 cup fresh blueberries
- 1 tsp vanilla extract
- Optional: Lemon zest from ½ lemon for extra flavor
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- Arrange 12 graham cracker squares in a single layer.
- In a bowl, whisk together the Greek yogurt, cheesecake pudding mix, and vanilla until smooth.
- Fold in the light whipped topping until fluffy.
- Gently fold in the blueberries.
- Spread the mixture evenly over the graham crackers.
- Top with the remaining 12 graham cracker squares.
- Freeze for 4–6 hours, or until firm.
- Lift out using the parchment paper and slice into 12 sandwiches.
- Let sit at room temperature for 2–3 minutes before serving.
