Ingredients

  • 4 peppers (red, green, yellow or orange)
  • 1 lb. Laura’s lean ground beef (96% lean)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup brown rice, cooked
  • 1 1/4 cup tomato sauce, divided
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3/4 cup part skim mozzarella cheese, shredded

Instructions

  1. Preheat oven to 350 degrees F.
  2. Wash the peppers, cut the tops off and remove the seeds. If you like a softer pepper add them to boiling water for 2 minutes and drain.
  3. Spray a baking dish with cooking spray and add the peppers open face up.
  4. In a large skillet add the ground beef, onion and garlic. Drain the ground beef once it is cooked through.
  5. Stir in the cooked rice, 1 cup of tomato sauce, Worcestershire sauce, Italian seasoning, salt and pepper. Cook on medium heat for 2 minutes, until the mixture is warmed through.
  6. Evenly divide the meat mixture in the peppers. Top each stuffed pepper with one tablespoon of tomato sauce.
  7. Bake for 20 minutes. Remove, top with cheese then bake 5 minutes, or until the cheese melts.
