Ingredients
- 4 peppers (red, green, yellow or orange)
- 1 lb. Laura’s lean ground beef (96% lean)
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup brown rice, cooked
- 1 1/4 cup tomato sauce, divided
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 3/4 cup part skim mozzarella cheese, shredded
Instructions
- Preheat oven to 350 degrees F.
- Wash the peppers, cut the tops off and remove the seeds. If you like a softer pepper add them to boiling water for 2 minutes and drain.
- Spray a baking dish with cooking spray and add the peppers open face up.
- In a large skillet add the ground beef, onion and garlic. Drain the ground beef once it is cooked through.
- Stir in the cooked rice, 1 cup of tomato sauce, Worcestershire sauce, Italian seasoning, salt and pepper. Cook on medium heat for 2 minutes, until the mixture is warmed through.
- Evenly divide the meat mixture in the peppers. Top each stuffed pepper with one tablespoon of tomato sauce.
- Bake for 20 minutes. Remove, top with cheese then bake 5 minutes, or until the cheese melts.
