Onion Beef Fried Rice

We keep it low in points by:

  • Using lean beef (or extra lean ground beef)
  • Mixing in cauliflower rice (or fully swapping!)
  • Minimal oil + big flavor from onions & soy sauce

📝 Ingredients (2 servings)

  • 120g extra lean ground beef (5% or less)
  • 2 cups cauliflower rice (or 1 cup rice + 1 cup cauliflower rice)
  • 1 medium onion, sliced thin
  • 1 egg (optional – adds 0–2 pts depending on plan)
  • 1–2 cloves garlic (or garlic powder)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil (optional but flavorful)
  • Cooking spray
  • Green onions (optional)

🍳 Instructions

  1. Spray pan and cook beef until browned. Remove and set aside.
  2. In same pan, spray again and sauté onions until soft + slightly caramelized.
  3. Add garlic and cook 30 sec.
  4. Add cauliflower rice (and regular rice if using). Cook 3–5 mins.
  5. Push to side, scramble egg (if using).
  6. Add beef back in + soy sauce + sesame oil. Mix well.
  7. Cook another 1–2 mins, top with green onions.

🔢 Points (approx)

  • All cauliflower version: ~1–2 points per serving
  • Half rice / half cauliflower: ~3–4 points
  • With egg + sesame oil: +1–2 points

💡 Tips to keep points LOW

  • Use spray instead of oil
  • Go heavy on onions → adds sweetness without points
  • Add veggies (cabbage, zucchini, mushrooms) for volume = 0 points
  • Skip sesame oil if you want absolute lowest points
