Method

  1. Rinse chickpeas thoroughly and dry them so the dressing clings. Add them to a bowl with cucumber, tomatoes, onion, feta, and parsley.
  2. Whisk oil, lemon juice, mustard, oregano, a pinch of salt, and black pepper until emulsified. Remember that feta contributes salt.
  3. Pour dressing over salad and fold gently. Rest 10 minutes so chickpeas absorb flavor without the vegetables losing crunch.
  4. Taste and add lemon or pepper as needed. Serve cool or at room temperature.

Dry chickpeas carry the lemon dressing instead of diluting it. Seed a watery cucumber and salt only after feta is included. Cannellini beans can replace chickpeas, and dill can replace parsley. To turn the salad into a fuller grain bowl, fold in two cups of cooled cooked farro and make one-and-a-half times the dressing. Warm grain would wilt parsley and soften cucumber, so spread it on a tray until completely cool before combining. If the chickpeas taste chalky, an extra five-minute rest in the lemon dressing improves them more effectively than adding another layer of salty feta.
