1 Point Pineapple Zucchini Muffins

Oven 350 degees

2 cups splenda

1/2 cup veg oil + 1/2 c ICBINB SPRAY

tsp vanilla…cream this together

2 eggs added 1 at a time

Beat this …then add 1 can of crushed pineapple drained( in juice)

2 cups of shredded zucchini

Then add your dry ingredients and mix until just combined.

In a separate bowl whisk together

3 cups of King A whole wheat flour

1/2 tsp baking soda

1/2 baking powder

1/2 tsp salt

1 tsp cinnamon

1 tsp ground ginger

i always like to add 1 box of sugar free vanilla pudding( you dont have to)

You can bake this in a greased loaf pan or in muffin pan like I did.

A loaf pan bakes for 50-60 minutes.

Muffins bake for 15-16 minutes

You can dust with powdered sugar if you wish.
