1 Point Chocolate Peanut butter cookies

Boasting 6 grams of protein each, these hearty cookies make a smart snack or breakfast. They contain no added sugar (if you make sure to use Lily’s chocolate chips), being sweetened naturally with mashed banana. There’s no need to puree the cottage cheese; you can simply mash it with the banana.

Ingredients

Banana

1 medium

Fat free cottage cheese

½ cup(s)

Vanilla extract

1 tsp

Table salt

¼ tsp

Egg

1 large egg(s)

Powdered peanut butter

¼ cup(s)

Uncooked old fashioned rolled oats

1 cup(s)

Lily’s Milk Chocolate Style Baking Chips

Instructions

  1. Preheat the oven to 350°F. Line a sheet pan with parchment paper or a silicone mat.
  2. In a medium bowl, mash the banana with a fork until almost smooth. Add the cottage cheese and mash to desired consistency. Whisk in the vanilla, salt, and egg until smooth. Whisk in the peanut butter powder until well combined. Stir in the oats and chocolate chips.
  3. Drop the dough by ¼ cupfuls onto the prepared pan. Bake until the cookies are set and lightly browned, 15 to 18 minutes.
  4. Serving size: 1 cookie
