Weight Watchers Pepperoni Pizza Cupcakes
The name “muffin pan” doesn’t do it justice: This versatile baking tray also turns out perfectly portioned pizzas! We topped our mini pies with turkey pepperoni, but feel free to experiment with extras like sautéed peppers, onions, mushrooms, spinach, or leftover cooked chicken. Serve as a game-day appetizer or as a fun family snack. Low-Point Version — only 1-2 WW Points each (depending on your cheese & pepperoni brand)
These mini pizza cupcakes are cheesy, crispy around the edges, and perfect for snacks, lunch, or meal prep!
Ingredients (Makes 6)
- 12 turkey pepperoni slices
- 1 cup reduced-fat mozzarella cheese
- 1/3 cup pizza sauce (low sugar)
- 2 tbsp turkey bacon bits or finely chopped turkey pepperoni
- 1 tsp Italian seasoning
- Nonstick cooking spray
Optional Low-Point Add-Ins
- Mushrooms
- Diced bell peppers
- Jalapeños
- Onion
Instructions
- Preheat oven to 400°F (200°C).
- Spray a muffin tin with nonstick spray.
- Place 2 pepperoni slices in each muffin cup to create the “crust.”
- Add about 1 tsp pizza sauce into each cup.
- Sprinkle in turkey bacon bits or chopped turkey pepperoni.
- Top evenly with reduced-fat mozzarella cheese.
- Add one pepperoni slice on top of each cupcake.
- Bake for 10–13 minutes until bubbly and golden around the edges.
- Let cool 3–5 minutes before removing from the pan.

- 1 Point each if using fat-free mozzarella + turkey pepperoni
- 2 Points each with reduced-fat mozzarella
