Weight Watchers Cheeseburger Soup

Ingredients
For the Soup
- 1 lb 99% lean ground turkey
(or extra lean ground chicken) - 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 cups russet potatoes, peeled and diced small
(small cubes cook faster and make soup creamier) - 1 cup shredded carrots
- 1 cup diced tomatoes
- 4 cups fat-free chicken broth
- 1 tsp Worcestershire sauce
- 1 tsp yellow mustard
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt & black pepper to taste
For the Creamy Cheese Base
- 1 cup unsweetened almond milk
- 4 oz fat-free cream cheese, softened
- 1 cup reduced-fat sharp cheddar cheese, shredded
- 2 tbsp cornstarch
- 2 tbsp cold water
Optional Toppings
(may add points depending on amount)
- Fresh parsley
- Extra light cheddar
- Turkey bacon crumbles
- Pickles
- Green onions
Instructions
Step 1: Brown the Meat
Spray a large soup pot or Dutch oven with nonstick spray.
Add the lean turkey and diced onion. Cook over medium heat for about 6–8 minutes, breaking the meat apart as it cooks.
Once browned, add garlic and cook another 30 seconds until fragrant.
Step 2: Build the Soup
Add:
- potatoes
- carrots
- tomatoes
- chicken broth
- Worcestershire sauce
- mustard
- paprika
- onion powder
- garlic powder
- salt & pepper
Stir everything together well.
Bring to a boil, then reduce heat to medium-low.
Cover and simmer for 15–20 minutes, or until potatoes are fork tender.
Step 3: Make it Creamy
In a bowl, whisk together:
- almond milk
- softened cream cheese
Mix until mostly smooth.
Pour into the soup and stir well.
Step 4: Thicken the Soup
In a small bowl, mix:
- 2 tbsp cornstarch
- 2 tbsp cold water
Stir until smooth.
Slowly pour into the soup while stirring continuously.
Let simmer for 3–5 minutes until thickened and creamy.
Step 5: Add the Cheese
Reduce heat to low.
Slowly stir in reduced-fat cheddar cheese until fully melted.
Do not boil after adding cheese or it can become grainy.
