Weight Watchers Peanut Butter Cloud Cookies (No Flour)

These soft, fluffy peanut butter cookies are made without flour and keep the points as low as possible while still tasting like a treat.

Ingredients

  • ½ cup powdered peanut butter (PB2 or similar)
  • 2 large eggs
  • ¼ cup granulated sweetener (monk fruit or erythritol)
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk eggs until slightly frothy.
  4. Add powdered peanut butter, sweetener, vanilla, baking powder, and salt.
  5. Mix until smooth and fluffy.
  6. Scoop 12 mounds onto the baking sheet.
  7. Bake for 10–12 minutes, until lightly golden.
  8. Let cool on the pan for 5 minutes before transferring to a wire rack.

Optional Add-Ins

  • Cinnamon
  • Sugar-free chocolate chips (adds points)
  • A sprinkle of flaky sea salt
