• 4 small low-carb / light tortillas (Ole Xtreme Wellness, Mission Carb Balance, etc.) — ~1–2 pts each
• 8 oz extra-lean ground beef (96% lean) — 0 pts
• ½ cup fat-free shredded cheddar or mozzarella — 0–1 pt
• ¼ cup finely chopped onion — 0 pts
• ¼ cup chopped bell pepper — 0 pts
• 2 tbsp salsa — 0 pts
• Garlic powder, paprika, salt & pepper — 0 pts
• Optional: chopped green onions or parsley

👩🍳 Instructions
- Cook the beef
• Spray pan with cooking spray
• Brown ground beef with onion & peppers
• Drain if needed
• Add spices and salsa
• Cook until mixture is thick - Assemble wraps
• Lay tortilla flat
• Add beef mixture down the center
• Sprinkle fat-free cheese on top - Roll tightly like a burrito or enchilada
- Crisp them up (optional but recommended)
• Place seam-side down in a dry skillet or air fryer
• Cook until tortilla is golden and cheese melts
