Ingredients
- 1 can (15 ounces) mandarin oranges in juice
- 1 cup vanilla Greek yogurt
- 1/2 cup cold heavy cream
- 1 tablespoon powdered sugar
- 1/2 teaspoon vanilla
- 1 teaspoon finely grated orange zest
- Pinch of salt
- 2 tablespoons toasted sliced almonds, optional
Equipment
Use a fine-mesh strainer, clean towel, chilled bowl, hand mixer, flexible spatula, citrus zester, and four covered serving bowls.
Method
- Drain oranges for 10 minutes. Spread them on a clean towel and blot gently, reserving four segments for garnish.
- Beat cold cream with powdered sugar to soft peaks; the tip should bend when the beaters lift.
- Stir yogurt, vanilla, zest, and salt in a second bowl.
- Fold one-third of whipped cream into yogurt to lighten it, then fold in the remainder until no white streaks remain.
- Fold in drained oranges with two or three broad strokes so segments remain intact.
- Divide among bowls, cover, and chill 30 minutes. Garnish with reserved fruit and almonds immediately before serving.
Cues and troubleshooting
A finished cream should mound softly rather than flow. Wet fruit thins it, so blotting matters. If the cream becomes grainy, it was overwhipped; fold in one tablespoon unwhipped cream. If the mixture loosens after folding, chill it rather than stirring more. Use only the colored zest, because white pith tastes bitter. Avoid fresh pineapple in this dairy mixture; its enzymes and juice can alter texture.
Substitutions
Fresh clementine segments can replace canned fruit if membranes and seeds are removed. Plain yogurt works with one or two teaspoons honey to taste. Toasted coconut or crushed vanilla wafers can replace almonds, but add either at serving so it stays crisp. For nut-free service, omit almonds and confirm topping labels.
Storage and safety
Planning note
Chill the bowl and beaters for 10 minutes before whipping cream, especially in a warm kitchen. The yogurt base and drained fruit can be prepared separately several hours ahead. Fold them together only after the cream is whipped. For uniform servings, divide the cream first and then place the reserved segments on top.
Clear glass bowls show the citrus pieces and make portion sizes easy to compare before garnishing.
Refrigerate promptly at 40°F/4°C or colder and use within two days. Do not keep dairy cream at room temperature beyond two hours, or one hour above 90°F/32°C. Transport in a chilled carrier. Freezing is not recommended because yogurt can separate and citrus becomes soft. Use clean utensils when returning leftovers to refrigeration.
Add any crunchy garnish immediately before serving so it does not soften.
