Method

  3. Cook over medium heat while whisking constantly. Once broad bubbles rise through the center and the mixture coats the whisk, cook one additional minute.
  4. Remove from heat. Add chopped chocolate and both extracts; whisk until glossy. Divide among ramekins. Press reusable covers or parchment against the surfaces for skin-free pudding and chill 3 hours. Add almonds just before serving.

Flavor and structure

Espresso intensifies cocoa without making the dessert taste sharply of coffee; use 1/2 teaspoon for a milder result. Finely chopped chocolate melts evenly and rounds out cocoa’s bitterness. Almond extract is potent, so measure it rather than pouring from the bottle. The toasted almonds echo that aroma while providing contrast to the smooth custard.

Useful cues and corrections

Before boiling, the mixture may look slightly grainy from cocoa. It should become dark and satin-like as starch gelatinizes. If it is thin after chilling, it probably never reached a full bubble; return it to the pan, warm gently, and boil for a minute. Scorched pudding has a bitter smell: do not scrape the pan bottom when transferring it. Lumps can usually be removed by passing hot pudding through a fine sieve.

Coffee strength should be adjusted through espresso powder, not brewed coffee, which would dilute the starch ratio.
