Best Low-Point WW Butter Pecan Ice Cream

Ice-cream is one of my favorite foods of summer. It’s perfect after a day at the beach, as a special dessert, or pretty much anytime. The flavor of this Low-Carb Butter Pecan Ice-Cream takes me back to my childhood. Butter pecan was my brother’s favorite flavor, so it was the one flavor we often had in the house. We always had it on birthdays, but often enjoyed it after a hard day of work in the garden.

 Prep time: 10 minutes

 Freeze time: 3–4 hours

 Servings: 4 (approx. ½ cup per serving)

 Estimated WW Points: 2–3 Points per serving (depending on your specific WW plan and choice of light butter)

Ingredients

For the Ice Cream Base:

 2 cups Fat-Free or 1% Cottage Cheese (blends smooth and creamy with very low points)

 1–2 tbsp Unsweetened Almond Milk (just enough to help the blender spin)

 ¼ cup Granulated Sugar-Free Brown Sweetener (e.g., Swerve Brown, Lakanto Golden, or Truvia Sweet Complete Brown)

 1 tsp Pure Vanilla Extract

 ½ tsp Butter Extract / Flavoring (the secret ingredient for that rich bakery flavor without the heavy butter)

 Pinch of Salt

For the Toasted Butter Pecans:

 ¼ cup Pecans, finely chopped

 1 tsp Light Butter (or I Can’t Believe It’s Not Butter Light)

 1 tbsp Granulated Sugar-Free Brown Sweetener

Instructions

1. Toast the Pecans:

 In a small skillet over medium-low heat, melt 1 tsp light butter.

 Add the chopped pecans and 1 tbsp brown sweetener.

 Toast for 2–3 minutes until golden brown and fragrant. Remove from heat and let them cool completely.

2. Blend the Base:

 In a high-speed blender or food processor, combine the cottage cheese, almond milk, ¼ cup brown sweetener, vanilla extract, butter extract, and a pinch of salt.

 Blend on high for 1 to 2 minutes, scraping down the sides as needed, until the mixture is completely smooth and velvety (no cottage cheese curds left).

3. Mix & Layer:

 Pour the blended base into a freezer-safe container or loaf pan.

 Stir in 3/4 of the cooled toasted pecans, reserving a few to sprinkle on top for presentation.

4. Freeze:

 Cover and freeze for 3 to 4 hours. For the best texture, give it a quick stir every hour during the first 2 hours of freezing to prevent ice crystals from forming.

5. Serve:

 Remove from the freezer and let it sit at room temperature for 10–15 minutes to soften up before scooping.

WW Tips

 Craving extra richness? Swap 1/2 cup of the cottage cheese for Unsweetened Vanilla Fairlife Shake or Fat-Free Half & Half (adjust points accordingly).

 Ninja Creami Friendly: If you own a Ninja Creami, just blend the base ingredients, freeze for 24 hours on the Lite Ice Cream cycle, and mix in the pecans using the Mix-In feature for an ultra-authentic ice cream shop texture!
