Weight Watchers Crustless Pizza Pie

Ingredients

  • 1 cup fat-free cottage cheese
  • 3 large eggs
  • ½ cup reduced-fat shredded mozzarella cheese
  • ½ cup turkey pepperoni, chopped
  • ½ cup lean turkey sausage, cooked and crumbled
  • ½ cup diced bell pepper
  • ¼ cup diced onion
  • 2 tbsp pizza sauce (no sugar added)
  • 1 tsp Italian seasoning
  • ¼ tsp garlic powder
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a 9-inch pie dish with nonstick cooking spray.
  3. In a blender, blend cottage cheese and eggs until smooth.
  4. Stir in mozzarella, turkey pepperoni, turkey sausage, bell pepper, onion, pizza sauce, Italian seasoning, and garlic powder.
  5. Pour mixture into the prepared pie dish.
  6. Bake for 30–35 minutes, or until the center is set and the top is golden brown.
  7. Let cool for 10 minutes before slicing.
  8. Garnish with fresh parsley or basil if desired.
