Weight Watchers Peanut Butter Cloud Cookies (No Flour)
These soft, fluffy peanut butter cookies are made without flour and keep the points as low as possible while still tasting like a treat.

Ingredients
- ½ cup powdered peanut butter (PB2 or similar)
- 2 large eggs
- ¼ cup granulated sweetener (monk fruit or erythritol)
- ½ tsp vanilla extract
- ½ tsp baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a bowl, whisk eggs until slightly frothy.
- Add powdered peanut butter, sweetener, vanilla, baking powder, and salt.
- Mix until smooth and fluffy.
- Scoop 12 mounds onto the baking sheet.
- Bake for 10–12 minutes, until lightly golden.
- Let cool on the pan for 5 minutes before transferring to a wire rack.

- Sugar-free chocolate chips (adds points)
- A sprinkle of flaky sea salt
