Tomato Basil Bruschetta

Crispy, cheesy, fresh, and packed with flavor — but made lighter and lower in points!

Ingredients

  • 6 slices light Italian bread or low-point baguette
  • 2 ripe tomatoes, sliced thin
  • 1/2 cup reduced-fat mozzarella cheese, shredded
  • Fresh basil, chopped
  • 1 tsp garlic powder
  • Salt & black pepper
  • Italian seasoning
  • Cooking spray or olive oil spray

Optional Low-Point Additions

  • Minced garlic
  • Balsamic glaze drizzle
  • Red pepper flakes
  • Parmesan sprinkle

Instructions

Step 1: Prep the bread

Preheat oven to 400°F (200°C).

Place bread slices on a baking sheet and lightly spray with cooking spray.
Bake for about:

  • 4–5 minutes
    until lightly crisp.

Step 2: Add toppings

Top each slice with:

  • a little mozzarella
  • tomato slices
  • garlic powder
  • Italian seasoning
  • salt & pepper

Add another tiny sprinkle of mozzarella on top to help everything melt together.

Step 3: Bake

Bake for:

  • 6–8 minutes
    until cheese is melted and bubbly.

For extra crisp edges, broil for 1 minute at the end.

Step 4: Finish

Remove from oven and sprinkle with:

  • fresh basil
  • black pepper
  • optional balsamic glaze drizzle

Serve warm 😍
