Tomato Basil Bruschetta
Crispy, cheesy, fresh, and packed with flavor — but made lighter and lower in points!

Ingredients
- 6 slices light Italian bread or low-point baguette
- 2 ripe tomatoes, sliced thin
- 1/2 cup reduced-fat mozzarella cheese, shredded
- Fresh basil, chopped
- 1 tsp garlic powder
- Salt & black pepper
- Italian seasoning
- Cooking spray or olive oil spray
Optional Low-Point Additions
- Minced garlic
- Balsamic glaze drizzle
- Red pepper flakes
- Parmesan sprinkle
Instructions
Step 1: Prep the bread
Preheat oven to 400°F (200°C).
Place bread slices on a baking sheet and lightly spray with cooking spray.
Bake for about:
- 4–5 minutes
until lightly crisp.
Step 2: Add toppings
Top each slice with:
- a little mozzarella
- tomato slices
- garlic powder
- Italian seasoning
- salt & pepper
Add another tiny sprinkle of mozzarella on top to help everything melt together.
Step 3: Bake
Bake for:
- 6–8 minutes
until cheese is melted and bubbly.
For extra crisp edges, broil for 1 minute at the end.
Step 4: Finish
Remove from oven and sprinkle with:
- fresh basil
- black pepper
- optional balsamic glaze drizzle
