Toasted Almond Mocha Pudding (Low Point)

Servings: 3–4
Estimated Points: ~1–2 points per serving (depending on your plan + toppings)

🥣 Ingredients:

  • 2 cups fat-free cottage cheese (blended smooth)
  • 2 tbsp unsweetened cocoa powder
  • 1–2 tsp instant coffee or espresso powder
  • 2–3 tbsp zero-calorie sweetener (like stevia/erythritol, adjust to taste)
  • 1 tsp vanilla extract
  • 2–4 tbsp unsweetened almond milk (to thin, if needed)
  • 1 tbsp finely crushed toasted almonds (for topping – keep minimal for low points)

👩‍🍳 Instructions:

  1. Blend cottage cheese until completely smooth and creamy.
  2. Add cocoa powder, coffee, sweetener, and vanilla. Blend again until silky.
  3. Add a splash of almond milk if you want a lighter, pudding-like texture.
  4. Chill for at least 30–60 minutes for best flavor.
  5. Top with a small sprinkle of toasted almonds before serving.

💡 Tips to Keep Points Low:

  • Skip or reduce almonds (they add most of the points).
  • Use fat-free cottage cheese only.
  • Add a pinch of salt to enhance the chocolate flavor without extra calories.

✨ Optional Add-Ons (still low-ish):

  • Sugar-free chocolate syrup drizzle
  • Dust of cocoa powder
  • A few mini sugar-free chocolate chips
