Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups cauliflower rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1/2 teaspoon salt
- 1 avocado, diced
- 1 lime, cut into wedges
- 1/4 cup chopped cilantro
Method
- Heat oil over medium. Cook onion and pepper 5 minutes. Add garlic, cumin, and chili powder for 30 seconds.
- Add cauliflower rice, beans, corn, salsa, and salt. Cover and cook 6 minutes.
- Uncover and cook 3–5 minutes until cauliflower is tender and mixture reaches 165°F.
- Divide into four bowls; add avocado, cilantro, and lime.
