Method

  1. Place the empty sheet pan in the oven and heat to 425°F.
  2. Combine carrots, broccoli, bell pepper, zucchini, and onion. Add oil, garlic powder, oregano, salt, and pepper; toss until every piece has a light sheen.
  3. Carefully spread the vegetables on the hot pan in one layer. Keep the onion wedges intact where possible and turn flat surfaces against the pan.
  4. Roast 15 minutes. Turn with a spatula, redistribute crowded pieces, and roast 13–20 minutes more.
  5. Remove when carrots are easily pierced but not collapsing, broccoli edges are brown, and zucchini centers remain intact. Toss with lemon juice and serve warm.

Oil conducts heat and carries the dried seasonings; too little leaves dusty patches, while excess makes the tray greasy. Carrots bring sweetness and need the smallest cut. Broccoli supplies crisp edges, zucchini moisture, pepper sweetness, and onion savory depth. Lemon juice added after roasting stays bright and prevents acid from slowing surface browning.

Troubleshooting

Pale, watery vegetables usually indicate crowding, a cool pan, or wet produce. Dry washed vegetables thoroughly and use the specified pan. If pieces overlap, divide the batch between two pans and rotate them halfway. Burned broccoli with firm carrots means the carrot coins were too thick. Cut by dimension rather than relying on whole-vegetable counts.

Do not taste vegetables directly from the pan; trapped steam and metal are very hot. Discard cooked vegetables left at room temperature beyond 2 hours.

Substitutions

Cauliflower florets can replace broccoli by weight. Yellow squash can replace zucchini. Sweet potato is not a direct replacement unless cut into 1/2-inch cubes; larger pieces will lag behind. Fresh minced garlic can scorch at this temperature, so garlic powder is preferred.

Storage

Refrigerate cooled leftovers in a covered container for up to 4 days. Reheat spread on a sheet pan at 400°F until steaming hot, or to 165°F. Freeze up to 1 month, understanding that thawed zucchini and pepper will be softer.
