Method

  1. Mash the banana in a shallow bowl until smooth. Whisk in pumpkin, eggs, milk, vanilla, cinnamon, nutmeg, and salt until no egg-white streaks remain.
  2. Heat a skillet over medium-low. Add 1/2 teaspoon butter and spread it over the surface.
  3. Dip two bread slices one at a time, about 10 seconds per side. Let excess custard drip back into the bowl; do not soak until fragile.
  4. Cook 2–3 minutes per side, turning once, until both surfaces are golden and the center reaches at least 160°F. Repeat in three batches with remaining butter and bread.
  5. Serve promptly, or hold finished slices in a single layer in a 200°F oven for no longer than 20 minutes.
