WW Meaty Mozzarella stuffed Peppers

These stuffed peppers give you all the cheesy, beefy comfort of the keto version — but lighter and WW-friendly. Tender roasted peppers packed with seasoned lean beef, garlic, sauce, and melty mozzarella. SO satisfying and surprisingly low in points!

Ingredients (Makes 8 stuffed peppers)

  • 4 large green bell peppers, halved
  • 1 lb 96% lean ground beef
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup no-sugar-added marinara sauce
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 cup reduced-fat shredded mozzarella
  • Optional: red pepper flakes or parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut peppers in half and remove seeds. Place on a baking tray.
  3. Spray skillet with cooking spray and cook onion + garlic for 2 minutes.
  4. Add lean ground beef and cook until browned.
  5. Stir in marinara sauce and seasonings. Simmer 3–4 minutes.
  6. Fill each pepper half with the meat mixture.
  7. Top evenly with reduced-fat mozzarella.
  8. Bake for 25–30 minutes until peppers are tender and cheese is bubbly and golden

  • About 2–3 WW Points per stuffed pepper half
    (depending on your specific mozzarella and sauce)
