WW Meaty Mozzarella stuffed Peppers
These stuffed peppers give you all the cheesy, beefy comfort of the keto version — but lighter and WW-friendly. Tender roasted peppers packed with seasoned lean beef, garlic, sauce, and melty mozzarella. SO satisfying and surprisingly low in points!
Ingredients (Makes 8 stuffed peppers)
- 4 large green bell peppers, halved
- 1 lb 96% lean ground beef
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 cup no-sugar-added marinara sauce
- 1 tsp Italian seasoning
- 1 tsp paprika
- Salt & pepper to taste
- 1 cup reduced-fat shredded mozzarella
- Optional: red pepper flakes or parsley
Instructions
- Preheat oven to 375°F (190°C).
- Cut peppers in half and remove seeds. Place on a baking tray.
- Spray skillet with cooking spray and cook onion + garlic for 2 minutes.
- Add lean ground beef and cook until browned.
- Stir in marinara sauce and seasonings. Simmer 3–4 minutes.
- Fill each pepper half with the meat mixture.
- Top evenly with reduced-fat mozzarella.
- Bake for 25–30 minutes until peppers are tender and cheese is bubbly and golden
