Weight Watchers Taco Casserole ๐ฎ

Ingredients
- 1 lb 99% lean ground turkey
- 1 packet taco seasoning (low sodium if possible)
- 1 cup fat-free refried beans
- 1 cup salsa
- 1ยฝ cups fat-free shredded mozzarella or cheddar blend
- 1 cup nonfat Greek yogurt (for topping instead of sour cream)
- 4 low-carb tortillas, cut into strips
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Cooking spray
Toppings
- Diced tomatoes
- Sliced black olives
- Green onions
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Spray a casserole dish with cooking spray.
- In a skillet, cook onion and ground turkey until browned. Drain if needed.
- Stir in taco seasoning, garlic powder, smoked paprika, salsa, and refried beans. Simmer 2โ3 minutes.
- Layer half of the tortilla strips in the casserole dish.
- Spread half of the taco meat mixture over tortillas and sprinkle with some cheese.
- Repeat layers, finishing with remaining cheese on top.
- Bake uncovered for 20โ25 minutes until bubbly and melted.
- Let cool slightly, then top with Greek yogurt, tomatoes, olives, and green onions just like the photo.
