Ingredients

  • 1 lb 99% lean ground turkey
  • 1 packet taco seasoning (low sodium if possible)
  • 1 cup fat-free refried beans
  • 1 cup salsa
  • 1ยฝ cups fat-free shredded mozzarella or cheddar blend
  • 1 cup nonfat Greek yogurt (for topping instead of sour cream)
  • 4 low-carb tortillas, cut into strips
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Cooking spray

Toppings

  • Diced tomatoes
  • Sliced black olives
  • Green onions

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Spray a casserole dish with cooking spray.
  2. In a skillet, cook onion and ground turkey until browned. Drain if needed.
  3. Stir in taco seasoning, garlic powder, smoked paprika, salsa, and refried beans. Simmer 2โ€“3 minutes.
  4. Layer half of the tortilla strips in the casserole dish.
  5. Spread half of the taco meat mixture over tortillas and sprinkle with some cheese.
  6. Repeat layers, finishing with remaining cheese on top.
  7. Bake uncovered for 20โ€“25 minutes until bubbly and melted.
  8. Let cool slightly, then top with Greek yogurt, tomatoes, olives, and green onions just like the photo.
