Delicious WW Italian Pasta Salad

Light, fresh, crunchy, and FULL of flavor! This WW-friendly pasta salad is loaded with crisp veggies, olives, mozzarella, and tender pasta tossed in a zesty Italian-style dressing. Perfect for meal prep, cookouts, lunches, or a quick summer dinner 🙌

Ingredients

  • 8 oz thin spaghetti or angel hair pasta
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/4 red onion, diced
  • 1/2 cup sliced black olives
  • 3/4 cup reduced-fat mozzarella cubes
  • 2 tbsp chopped parsley

Light Dressing

  • 1/4 cup light Italian dressing
  • 1 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse under cold water.
  2. Add pasta to a large bowl with cucumber, tomatoes, peppers, onion, olives, and mozzarella.
  3. Mix dressing ingredients together.
  4. Pour dressing over salad and toss well.
  5. Chill for at least 30 minutes before serving for best flavor.
