Weight Watchers Low-Point Bacon Pea Salad

Ingredients

  • 4 cups frozen peas, thawed
  • 4 slices center-cut bacon, cooked crisp and crumbled
  • ½ cup red onion, diced

  • 1 tbsp light mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine peas, bacon, red onion, and cheddar cheese.
  2. In a small bowl, whisk together Greek yogurt, light mayo, vinegar, mustard, salt, and pepper.
  3. Pour dressing over the pea mixture and stir until evenly coated.
  4. Refrigerate for at least 30 minutes before serving for the best flavor.
