Weight Watchers Creamy Spinach Chicken Bake

A lighter version of the viral creamy keto chicken bake — still rich, cheesy, and super comforting without all the heavy cream and extra fat.

Ingredients

  • 2 lbs boneless skinless chicken breast, cubed
  • 4 cups fresh spinach
  • 1 cup fat-free cottage cheese
  • 4 oz light cream cheese
  • ¾ cup plain nonfat Greek yogurt
  • 3 cloves garlic, minced
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt & black pepper to taste
  • 1 cup reduced-fat mozzarella cheese
    (or fat-free mozzarella for lowest points)
  • Optional: red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly spray a baking dish with cooking spray.
  3. Add cubed chicken evenly into the dish.
  4. In a blender or bowl, mix:
    • cottage cheese
    • cream cheese
    • Greek yogurt
    • garlic
    • seasonings
  5. Fold in spinach.
  6. Spread the creamy spinach mixture over the chicken.
  7. Top with mozzarella cheese.
  8. Bake for 30–35 minutes until bubbly and chicken is fully cooked.
  9. Broil 2–3 minutes for a golden cheesy top.

Tips To Keep It Lower Points ✨

  • Use fat-free mozzarella
  • Use 1/3 less fat cream cheese
  • Serve over cauliflower rice or steamed veggies
  • Add mushrooms for extra volume without extra points
