Weight Watchers Classic Chicken Noodle Soup 🍲

This cozy chicken noodle soup is warm, comforting, and packed with tender chicken, soft noodles, carrots, and flavorful broth — just like the classic homemade version 🥕🍗
It tastes rich and hearty without using a lot of points, making it perfect for cold days, meal prep, or when you want something light but satisfying ✨

Only about 2–3 WW points per serving depending on your noodles!

Ingredients

  • 1 lb (450g) boneless skinless chicken breast
  • 6 cups low-sodium chicken broth
  • 2 cups water
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp dried parsley
  • Salt & black pepper to taste
  • 1½ cups extra wide egg noodles (use reduced amount for lower points)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery. Cook 5 minutes until softened.
  3. Stir in garlic, Italian seasoning, parsley, salt, and pepper.
  4. Add broth and water, then place chicken breasts into the pot.
  5. Bring to a boil, then reduce heat and simmer about 20 minutes.
  6. Remove chicken, shred with forks, and return to the soup.
  7. Add egg noodles and simmer 6–8 minutes until tender.
  8. Sprinkle with fresh parsley and serve hot.

WW Tips 💡

  • Use less noodles or high-fiber noodles to lower points even more.
  • Rotisserie chicken breast also works great for quick prep.
  • Add extra celery or carrots for more volume without adding points.
