Weight Watchers Cheesy Chicken Fajita Casserole 🌮🧀

This cheesy chicken fajita casserole is creamy, loaded with flavor, and super filling without tons of points 😍
Ingredients
- 1 lb boneless skinless chicken breast, diced
- 2 bell peppers, chopped
- 1 small onion, sliced
- 1 packet taco or fajita seasoning
- 1 can Rotel tomatoes, drained
- 1 cup fat-free Greek yogurt
- 1/2 cup reduced-fat cream cheese
- 1 cup reduced-fat Mexican cheese blend
- 1 cup cooked high-protein pasta or hearts of palm noodles
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C).
- Spray a casserole dish with nonstick spray.
- Cook chicken in a skillet until mostly done. Add peppers, onion, and fajita seasoning. Cook 5 minutes.
- Stir in Rotel, Greek yogurt, cream cheese, and pasta/noodles. Mix until creamy.
- Pour mixture into casserole dish.
- Top with shredded cheese.
- Bake for 20–25 minutes until hot and bubbly.
- Broil 1–2 minutes for a golden cheesy top if desired.
