Texture cues and troubleshooting
A thick sauce is important because watery sauce can soften the base. Keep vegetable pieces small and do not overload the top. Mushrooms release moisture; for a firmer result, sauté them until their liquid evaporates before assembly. The base puffs in the oven and settles during its rest. If the center still looks wet after the first bake, give it another two minutes before topping.
Substitutions
Use provolone or a mild cheddar for part of the mozzarella. Cooked crumbled sausage or pepperoni can be added sparingly; any raw meat must be fully cooked before it goes onto this short second bake.
