Ingredients
- 1 cup fat-free cottage cheese
- 1 cup grated carrots
- 1 cup rolled oats
- 1 egg
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 tbsp zero-calorie sweetener (optional)
- 1 tbsp raisins (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Blend the cottage cheese until smooth.
- In a bowl, mix cottage cheese, carrots, oats, egg, cinnamon, vanilla, and sweetener.
- Fold in raisins if using.
- Scoop into 8 cookie-sized mounds on a lined baking sheet and gently flatten.
- Bake for 18–22 minutes until set and lightly golden.
