Low-Point Version (Makes 8 Cookies)

Ingredients

  • 1 cup fat-free cottage cheese
  • 1 cup grated carrots
  • 1 cup rolled oats
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp zero-calorie sweetener (optional)
  • 1 tbsp raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend the cottage cheese until smooth.
  3. In a bowl, mix cottage cheese, carrots, oats, egg, cinnamon, vanilla, and sweetener.
  4. Fold in raisins if using.
  5. Scoop into 8 cookie-sized mounds on a lined baking sheet and gently flatten.
  6. Bake for 18–22 minutes until set and lightly golden.
  7. Let cool for 10 minutes before serving.
