Low-Point Weight Watchers Cabbage Stir-Fry Casserole

Ingredients

  • 6 cups green cabbage, thinly sliced
  • 1 lb 99% lean ground turkey (0 points)
  • 1 cup fat-free cottage cheese, blended smooth
  • 1 cup shredded carrots
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • ½ cup fat-free mozzarella cheese
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a large skillet with cooking spray and cook onion and garlic until softened.
  3. Add ground turkey and cook until browned.
  4. Stir in cabbage, carrots, onion powder, garlic powder, paprika, salt, and pepper. Cook for 5–7 minutes until the cabbage starts to soften.
  5. Remove from heat and mix in the blended fat-free cottage cheese.
  6. Transfer mixture to a casserole dish and spread evenly.
  7. Sprinkle fat-free mozzarella over the top.
  8. Bake for 25–30 minutes, until hot and bubbly.
  9. Broil for 2–3 minutes at the end for a golden cheesy top.

  • Fresh parsley
