Weight Watchers 5 can soup
This five-can soup is designed for speed: the canned ingredients go directly into one pot, making it useful for a simple lunch or busy-day dinner. Minestrone supplies the seasoned soup base, while tomatoes, mixed vegetables, corn, and black beans make the pot more substantial.
Ingredients
- 1 can minestrone soup
- 1 can stewed tomatoes
- 1 can mixed vegetables
- 1 can corn
- 1 can black beans
Instructions
- Open all five cans. Drain and rinse the black beans unless you prefer to include their liquid.
- Pour the minestrone soup, stewed tomatoes, mixed vegetables, corn, and black beans into a large pot.
- Stir well and bring the soup to a boil over medium-high heat.
- Reduce the heat and simmer until every component is heated through, stirring occasionally so the bottom does not scorch.
- Taste before adding salt because canned soup and vegetables can already contain a significant amount of sodium.
- Serve hot, using a consistent measuring cup if you are tracking portions.
Choosing the Cans
Can sizes and brands were not specified in the original formula, so use the nutrition labels on the products you select. Low-sodium or no-salt-added vegetables can reduce sodium, but they may need additional seasoning. The type of minestrone has the biggest influence on the soup’s flavor and thickness.
If you drain the corn or mixed vegetables, the finished volume will differ from a version that includes every can’s liquid. Keep your preparation consistent when calculating servings. You can add water only if the mixture is thicker than you prefer.
Storage and Reheating
Cool leftovers promptly and refrigerate them in a covered container. Reheat only the portion you need until it is steaming hot. The beans and vegetables may absorb liquid during storage, so a small amount of water can be added when reheating.
WW Points Note
The previously stated value of two points per cup may not apply to every combination of brands or current WW plan. Check the minestrone, corn, beans, and serving size in your current WW calculator. Do not assume that all canned products with the same general name have identical values.
