Two-Ingredient Soda Cupcakes
These simple cupcakes combine a measured box of yellow cake mix with one can of lemon-lime soda. No eggs, oil, butter, or additional water are used. The result is lighter and more delicate than a conventional cupcake, so accurate portioning and complete cooling help the crumb hold together.

Ingredients
- 1 box (15.25 ounces/432 g) plain yellow cake mix
- 1 can (12 fluid ounces/355 ml) lemon-lime soda, regular or zero-sugar, at room temperature
Method
- Heat the oven to exactly 350°F and place racks in the upper and lower thirds. Line 18 standard muffin cups with paper liners.
- Empty the dry cake mix into a large bowl. Pour in one-third of the soda slowly; pause while the foam subsides. Add the remainder in two additions, whisking gently after each.
- Scrape the bowl and fold until no dry pockets remain. Stop as soon as the batter is uniform. Do not add the eggs, oil, butter, or water printed on the cake-mix box.
- Divide the batter evenly among 18 liners, using about 3 tablespoons per cup. Each should be close to two-thirds full. Redistribute any remaining batter rather than overfilling a few cups.
- Bake for 12 minutes, then switch the pans between racks and rotate them front to back. Continue baking for 6–11 minutes. The tops should spring back after a light touch, and a wooden pick inserted in a center cupcake should emerge without wet batter.
- Cool in the pans for 5 minutes. Transfer the cupcakes to a wire rack and cool completely for about 40 minutes before covering or adding a topping.
Cues and troubleshooting
Room-temperature soda foams less aggressively than cold soda. Whisking hard for several minutes releases carbonation and can produce flat cakes. A tacky top while warm is normal; airflow during cooling firms it. Deeply sunken centers indicate underbaking or an oven door opened before the structure set. Return visibly wet cupcakes to the oven in 2-minute increments.
Use a plain 15.25-ounce mix without a separate syrup pouch. A different box weight changes the liquid ratio and yield. The batter is intentionally thinner than a traditional egg-and-oil cake batter.
Substitutions and storage
White or lemon cake mix may replace yellow mix at the same weight. Cola pairs with chocolate mix, but that becomes a different flavor formula. Check labels for wheat, milk, soy, or other allergens. Store unfrosted cupcakes airtight at room temperature for up to 2 days or refrigerate for 4 days. Freeze for up to 2 months. Refrigerate promptly if adding a perishable dairy topping.
