Ingredients
- 1 package (3 ounces) orange gelatin dessert mix
- 1 cup boiling water
- 1/2 cup cold water
- 2 cups plain Greek yogurt
- 1 cup whipped topping
- 1 can (11 ounces) mandarin oranges, drained
Method
- Whisk gelatin with boiling water 2 minutes until dissolved. Whisk in cold water and cool 15 minutes.
- Whisk yogurt into gelatin gradually until smooth.
- Fold in whipped topping and drained oranges.
- Transfer to dish, cover, and chill at least 3 hours until set. Divide eight servings.
Substitutions
Lime gelatin and drained pineapple may replace orange and mandarins. Dairy-free products may set differently.
Storage and safety
Refrigerate within 2 hours up to 3 days. Keep cold; do not freeze.
Dissolving and cooling gelatin
Use water at a full boil and whisk for two complete minutes so no crystals remain. Undissolved gelatin creates a grainy layer and weak set. The cold water lowers the temperature, but the mixture still needs the 15-minute cooling period; adding yogurt to very hot gelatin can make dairy separate. It should remain liquid but no longer feel hot against the bowl.
Folding for a light texture
Whisk yogurt in gradually, beginning with a few spoonfuls to equalize temperature. Fold whipped topping with broad strokes so it retains air. Drain mandarins for at least 10 minutes and blot gently; extra syrup can loosen the fluff. Reserve a few segments for garnish only if they are also dry.
Set and serving
Use a 2-quart dish so the layer is deep enough to scoop but chills evenly. After three hours, the center should hold a soft mound on a spoon. If still loose, chill one additional hour rather than adding dry gelatin. Serve in eight equal portions. Keep this orange-yogurt dessert distinct from vanilla fruit salad and cottage-cheese gelatin salad elsewhere on the site.
