These chilled cups layer an egg-free cocoa mousse with small pieces of baked brownie. The result is creamy and chocolate-forward, with enough cake texture to make each serving feel substantial.

Ingredients

  • 1 cup cold heavy cream
  • 1 cup plain Greek yogurt
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • 4 ounces fully baked, cooled brownie, cut into 1/2-inch cubes
  • 2 tablespoons mini chocolate chips, optional

Equipment

Have a chilled mixing bowl, hand mixer, fine-mesh sieve, flexible spatula, knife, and six 6-ounce glasses.

Method

  1. Sift cocoa and powdered sugar together to remove hard lumps.
  2. Beat cold cream on medium speed until it forms soft peaks. Stop before it looks stiff or grainy.
  3. In a second bowl, whisk yogurt, cocoa mixture, vanilla, and salt until smooth.
  4. Fold one-third of the whipped cream into the yogurt mixture to lighten it. Fold in the remainder with broad strokes until no white streaks remain.
  5. Reserve a few brownie cubes. Divide half the mousse among glasses, add brownie pieces, then cover with remaining mousse.
  6. Cover and chill one hour. Garnish with reserved brownie and chocolate chips just before serving.

Texture cues and troubleshooting

Soft peaks bend over when the beaters lift; this stage gives mousse a creamy rather than buttery texture. If the cocoa base seems thick, fold in two tablespoons whipped cream before adding the rest. Overmixing knocks out air, so stop as soon as the color is uniform. Brownies must be cool, because warm crumbs melt the cream. Very fudgy brownies can clump; chilled, cleanly cut cubes distribute more evenly.

Options

For stronger coffee notes, dissolve one teaspoon instant espresso in one teaspoon hot water, cool, and add with vanilla. Use gluten-free brownies if required, verifying all labels. Raspberries or sliced strawberries provide acidity; add them at serving so their juice does not loosen the mousse. Finely crushed chocolate cookies can replace brownie cubes, although they soften faster.

Storage and safety

Make-ahead plan

The mousse base can be made one day ahead, but for the clearest contrast, layer in the brownie pieces no more than four hours before serving. Keep garnishes separate. For neat glasses, transfer the mousse with a zip-top bag with one corner snipped, then wipe the rims before chilling. Chill the serving glasses first on a warm day.

Refrigerate covered at 40°F/4°C or colder and serve within two days. Do not leave dairy mousse out longer than two hours, or one hour above 90°F/32°C. This recipe intentionally contains no raw eggs. Freezing is not recommended because yogurt can separate on thawing. Use clean utensils for portioning and discard servings that have remained warm beyond the safe limit.
