pecan snowball cookies

Ingredients
- 3 tbsp light butter (Land O’Lakes Light or similar), softened
- 3 tbsp powdered sugar substitute (Swerve Confectioners or Monk Fruit)
- 1 tsp vanilla extract
- ⅔ cup all-purpose flour
- ¼ cup finely chopped pecans
- Pinch of salt
- Optional: powdered sugar substitute for dusting (very light)
Instructions
- Preheat oven to 350°F (175°C).
- Cream light butter and powdered sugar substitute until smooth.
- Mix in vanilla.
- Add flour and salt, stir until dough forms.
- Fold in chopped pecans.
- Roll into 16 small balls and place on parchment-lined baking sheet.
- Bake 10–12 minutes until just set (do not brown).
- Cool completely.
- Optional: lightly dust with powdered sugar substitute for that “snowball” look ❄️
Tips to Keep Points LOW
- Chop pecans very fine so you can use less
- Skip the heavy coating of powdered sugar (classic look, but adds points)
- Keep cookies small. Size matters here!
