Cabbage Soup

Ingredients

  • 1 tsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ยฝ head cabbage, shredded
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 4 cups fat-free chicken broth
  • 1 can diced tomatoes (no sugar added)
  • 1 cup cooked shredded skinless chicken breast
  • Salt, black pepper, paprika, garlic powder (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sautรฉ onion and garlic for 2โ€“3 minutes until fragrant.
  3. Add cabbage, celery, and bell pepper; cook about 3โ€“4 minutes until slightly softened.
  4. Pour in broth and diced tomatoes, then add seasonings.
  5. Stir in shredded chicken and simmer for 15โ€“20 minutes until vegetables are tender.
  6. Taste and adjust seasoning before serving.
