Cabbage Soup
Ingredients
- 1 tsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- ½ head cabbage, shredded
- 2 celery stalks, sliced
- 1 bell pepper, diced
- 4 cups fat-free chicken broth
- 1 can diced tomatoes (no sugar added)
- 1 cup cooked shredded skinless chicken breast
- Salt, black pepper, paprika, garlic powder (to taste)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic for 2–3 minutes until fragrant.
- Add cabbage, celery, and bell pepper; cook about 3–4 minutes until slightly softened.
- Pour in broth and diced tomatoes, then add seasonings.
- Stir in shredded chicken and simmer for 15–20 minutes until vegetables are tender.
- Taste and adjust seasoning before serving.
