Cabbage Soup

Ingredients

  • 1 tsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ½ head cabbage, shredded
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 4 cups fat-free chicken broth
  • 1 can diced tomatoes (no sugar added)
  • 1 cup cooked shredded skinless chicken breast
  • Salt, black pepper, paprika, garlic powder (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic for 2–3 minutes until fragrant.
  3. Add cabbage, celery, and bell pepper; cook about 3–4 minutes until slightly softened.
  4. Pour in broth and diced tomatoes, then add seasonings.
  5. Stir in shredded chicken and simmer for 15–20 minutes until vegetables are tender.
  6. Taste and adjust seasoning before serving.
