Blueberry Yogurt Protein Bites

Creamy, refreshing, high in protein, and perfect when you want something sweet without using a bunch of points!

Ingredients

  • 1 cup nonfat plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract
  • 1–2 packets sweetener (or to taste)
  • 1 tbsp sugar-free cheesecake or vanilla pudding mix (optional but helps make them thicker and creamier)

Optional Add-Ins

  • Lemon zest πŸ‹
  • Cinnamon
  • Mini sugar-free chocolate chips
  • Crushed freeze-dried berries

Instructions

Step 1: Prepare the yogurt mixture

In a medium bowl, combine:

  • Greek yogurt
  • Vanilla protein powder
  • Vanilla extract
  • Sweetener
  • Optional pudding mix

Mix until completely smooth and thick.
If the mixture feels too thin, let it sit for 2–3 minutes so the protein powder thickens it naturally.

Step 2: Add the blueberries

Gently fold the blueberries into the yogurt mixture.
Try not to crush them too much β€” whole berries give the best frozen texture!

Step 3: Form the bites

Line a plate, tray, or cutting board with parchment paper.

Using a spoon or small cookie scoop, drop small bite-sized clusters onto the tray.
They do not need to look perfect β€” homemade-looking bites actually turn out cutest 😍

Step 4: Freeze

Place the tray in the freezer for about:

  • 2–3 hours
    or until fully frozen and firm.

Storage

Store the bites in:

  • a freezer-safe bag
    or
  • airtight container

Keep frozen and enjoy straight from the freezer.
