Weight Watchers Blueberry Frozen S’mores

I’ve seen a few recipes on Pinterest for Frozen S’mores. They all used chocolate pudding for the chocolate layer. I used sugar free chocolate pudding to lighten it up. For the marshmallow layer most of the recipes used marshmallow fluff, cream cheese and Cool Whip. I decided to skip the marshmallow fluff and blueberry, the marshmallow layer is just Cool Whip.I started by making the chocolate pudding, then I lined an 8×10 baking dish with parchment paper and poured it in. Smooth it out so it’s a nice even layer. Makes: 12 frozen s’mores
WW Points: 2 Points each (may vary slightly depending on your graham crackers and yogurt brands)

Ingredients

  • 12 full graham cracker sheets (24 squares)
  • 2 cups plain nonfat Greek yogurt
  • 1 (1 oz) box sugar-free instant cheesecake pudding mix
  • 1 cup light whipped topping (such as Lite Cool Whip)
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract
  • Optional: Lemon zest from ½ lemon for extra flavor

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. Arrange 12 graham cracker squares in a single layer.
  3. In a bowl, whisk together the Greek yogurt, cheesecake pudding mix, and vanilla until smooth.
  4. Fold in the light whipped topping until fluffy.
  5. Gently fold in the blueberries.
  6. Spread the mixture evenly over the graham crackers.
  7. Top with the remaining 12 graham cracker squares.
  8. Freeze for 4–6 hours, or until firm.
  9. Lift out using the parchment paper and slice into 12 sandwiches.
  10. Let sit at room temperature for 2–3 minutes before serving.

WW Tips

  • Use fat-free Greek yogurt for the creamiest filling with the fewest points.
  • Frozen blueberries work too—just thaw and drain well before mixing.
  • Add a little lemon zest to make the blueberry flavor pop without adding points.
